A festive no-bake chocolate slab: dark and milk chocolate with pieces of stroopwafel, almond biscuits, speculoos and salted peanuts, finished with sprinkles, chocolate balls and coffee beans. It takes 20 minutes and, after an hour of chilling, is firm enough to break into pieces. Lovely as a gift, with coffee or on a festive table at Christmas and New Year. Tip: let the chocolate cool slightly after melting before stirring in the biscuits.

Method

01

Line the tin

Line a 14 x 20 cm tin with baking paper so you can easily lift the rocky road out later.

02

Melt the chocolate

Melt the dark and milk chocolate separately over a bain-marie, in a bowl above a pan of gently simmering water. Let them cool slightly.

03

Mix in the biscuits

Stir the stroopwafels, biscuits and peanuts through the dark chocolate.

04

Fill

Spoon the mixture into the tin and press down lightly.

05

Marble

Drizzle the milk chocolate over the top in lines and drag a fork through it in waves for a marbled look.

06

Decorate

Scatter the sprinkles, chocolate balls and coffee beans on top.

07

Chill

Leave the rocky road to set in the fridge for at least 1 hour and break or cut it into pieces.

Tips & notes

Contains peanuts, almonds (in the almond biscuits) and gluten. To make it free of peanuts and nuts, leave out the salted peanuts, replace them with extra biscuits or dried cranberries and use biscuits without nuts instead of the almond biscuits (check the label). Store the rocky road cool in an airtight tin for up to a week.

Chef's tip

Chop the biscuits coarsely and do not make the pieces too small, then you keep the bite and the structure stays chunky and attractive. Stir the biscuits into the chocolate only once it has cooled slightly, or they turn soft.

Variations

  • With marshmallows: add a handful of mini marshmallows for the classic American version.
  • With white chocolate: use white chocolate for the top layer and decorate with red and green sprinkles.
  • With dried fruit: stir cranberries or raisins through the chocolate for a little tartness.
