A luxurious side dish: crisp chips with a warm truffle cream sauce and a generous layer of grated Parmesan. The sauce takes ten minutes to make on a light roux of butter and flour, with cream, truffle paste and finely grated Parmesan, and goes as well with a steak as with a bowl of chips on the sofa.

Method
Cut the chips
Peel the potatoes, cut them into chips about 1 cm thick and rinse them. Pat them thoroughly dry.
Blanch
Heat the oil to 150 °C and fry the chips in batches for 5 minutes until soft, without colouring. Drain and let them cool.
Make the roux
Melt the butter in a saucepan over low heat, add the flour and stir for 1 to 2 minutes into a smooth, light roux that has not yet coloured.
Finish the sauce
Add the cream to the roux in three batches, whisking smooth after each. Let the sauce thicken gently over low heat for 3 minutes, stir in the truffle paste and finely grated Parmesan until the cheese has melted and season with pepper. Keep warm over very low heat.
Crisp up
Heat the oil to 180 °C and fry the chips for 2 to 3 minutes until golden and crisp. Drain and salt them immediately.
Serve
Divide the chips between plates, pour over the truffle cream sauce and grate the Parmesan generously on top. Serve immediately.
Tips & notes
Truffle paste varies a lot in strength: start with half a teaspoon and taste. Fry carefully, hot oil spits. Without a deep fryer you can also make the chips in an air fryer or oven (220 °C, 25 minutes), with a little oil.
Chef's tip
Use a light roux: 15 g butter and 15 g flour to 250 ml cream gives a sauce just thick enough to cling to the chips. Fry the chips twice: first 5 minutes at 150 °C, let them cool, then fry them for 2 to 3 minutes at 180 °C until golden and crisp. Grate the Parmesan over the chips only while they are hot, so it just melts and sticks.
Variations
- Without a deep fryer: bake the chips in the oven or air fryer for a lighter version.
- With fresh truffle: shave some fresh truffle over the chips if you want to go all out.
- With chives: sprinkle finely chopped chives or parsley on top for freshness.
