A good brownie has an intense chocolate flavour, a thin crust on top and a soft, gooey middle. The most important thing is not to overbake the brownies.

Method
Prepare the tin
Preheat the oven to 175 °C (conventional, top and bottom heat).
Line a square baking tin of about 20 × 20 cm with baking parchment.
Melt the chocolate and butter
Melt the chocolate together with the butter in a bain-marie or on a low setting in the microwave.
Leave the mixture to cool slightly.
Mix the eggs and sugar
Briefly whisk the eggs with the sugar. The mixture doesn't need to become fluffy.
Stir in the cooled chocolate mixture.
Add the dry ingredients
Mix the flour, cocoa powder and salt.
Briefly fold this into the batter. Add the nuts if you like.
Bake the brownies
Pour the batter into the tin.
Bake for about 20 to 25 minutes. The middle may still be slightly moist.
Leave to cool completely before cutting into pieces.
Tips & notes
It is better to underbake brownies slightly than to overbake them. For extra gooey brownies, leave them to rest for a few hours after cooling. Use good-quality chocolate for the best flavour.
