Method
Make the cream cheese cream
Drain the cherries well.
Beat the cream cheese smooth with the sugar and vanilla sugar. Whip the cream together with the cream stabiliser until stiff and gently fold it into the cream cheese mixture.
Build the dessert
Spread half of the cherries over a large serving dish. Spread half of the cream over them. Then repeat with the remaining cherries and cream.
Chill the dessert for about 1 hour.
Caramelise the almonds
Heat the sugar together with the butter in a pan until the sugar starts to caramelise. Add the flaked almonds and stir well.
Immediately spread the almonds over a sheet of baking parchment and leave to cool completely.
Finish
If you like, break the cooled almond caramel into smaller pieces and scatter them over the dessert just before serving.
Tips & notes
Only add the caramelised almonds just before serving so they stay crunchy. You can also build the dessert in individual glasses. Use well-chilled whipping cream for the best result.
