A cold dessert: tiramisu in little bowls, made quickly with a light cream of mascarpone, egg yolk and whipped egg white, flavoured with a splash of Marsala and a little orange zest. The cream is not cooked and rests for 4 hours in the fridge, and meanwhile everything is ready for assembling. You dip ladyfingers in coffee, place them in a bowl, pipe dollops of cream on top and dust with cocoa powder. A tip: use pasteurised egg, because the cream is not heated.

Method

01

Yolk and mascarpone

Mix the mascarpone with the egg yolk and 66 g icing sugar in a bowl and beat until smooth and light.

02

Whip the egg white

In a clean, grease-free bowl, whip the egg white with 33 g icing sugar until stiff peaks form.

03

Combine and flavour

Carefully fold the stiffly whipped egg white into the mascarpone mixture. Add the Marsala and orange zest and fold carefully until evenly combined.

04

Let it set

Cover the cream and chill it for at least 4 hours so it is firm enough to pipe.

05

Dip the ladyfingers

Briefly dip the ladyfingers in the coffee, break them into pieces if you like and divide them among 6 little bowls.

06

Pipe

Put the cream in a piping bag and pipe dollops of cream on top of the ladyfingers.

07

Finish

Dust with cocoa powder through a sieve. Keep chilled until serving.

Tips & notes

The quantities of coffee, ladyfingers and cocoa are calculated for 6 small bowls. The recipe uses raw egg: use pasteurised egg yolk and egg white (from a carton or bottle, sold with the eggs or baking supplies), especially for children, pregnant women, the elderly and people with weakened immunity. Marsala contains alcohol and the coffee caffeine: do not serve this dessert to young children, or leave out the Marsala and use decaffeinated coffee. Store the tiramisu covered in the fridge and eat it within 2 days.

Chef's tip

Whip the egg white to stiff peaks and fold it carefully into the mascarpone so the cream stays light. Leave the cream in the fridge for at least 4 hours, otherwise it is too soft to pipe. Dip the ladyfingers in the coffee only briefly, otherwise they go mushy.

Variations

  • Alcohol-free: leave out the Marsala and use a splash of extra coffee or orange juice.
  • With Amaretto: replace the Marsala with Amaretto for an almond flavour.
  • In one dish: place the dipped ladyfingers in a dish, cover with the cream and leave the dessert to set for 4 hours.
