A simple oven dish that even the smallest eaters happily dig into: potato slices with finely chopped chicken, onion and broccoli, covered with a creamy mixture of egg and a packet of seasoning mix, and topped with mature cheese. In the oven the dish turns golden brown and firm, so you can scoop it out neatly. A family meal for four with little work. Tip: chop the chicken very finely, so it spreads evenly through the dish and children find it more pleasant.

Method
Parboil the potatoes
Preheat the oven to 200°C and grease an ovenproof dish. Boil the potato slices for 5 minutes in salted water and drain them. Spread half over the bottom of the dish.
Prepare the chicken
Chop the chicken breast very finely and cut the onion into rings.
Fry the chicken and onion
Heat the oil in a frying pan and fry the chicken and onion for 3 minutes. Season with salt and pepper.
Fill the dish
Cut the broccoli into small florets. Spoon the chicken mixture into the dish and spread the broccoli over it. Lay the rest of the potato slices on top, overlapping like roof tiles.
Pour over the mixture
Stir the mix with the cold water and the egg until well combined and pour it evenly over the dish. Sprinkle with the cheese.
Bake
Bake the dish for about 45 minutes in the oven until golden brown and cooked through.
Tips & notes
This recipe uses a packet of mince mix with cauliflower (100 g), which gives a binding mixture with water and egg. If you do not have it, use the variation below. Check the label of the mix for allergens, as it may contain gluten. Grease the ovenproof dish well so the potatoes do not stick.
Chef's tip
Lay the top layer of potato slices overlapping like roof tiles. That lets the egg mixture seep nicely between them and makes the edges crisp.
Variations
- Without the packet mix: whisk 1 extra egg with 300 ml of milk, a tablespoon of mustard and a little nutmeg and pour that over the dish.
- With cauliflower: replace half the broccoli with cauliflower florets.
- Vegetarian: leave out the chicken and use 200 g of extra vegetables, for example mushrooms or courgette.
