A fish dish in an Asian style: salmon fillet marinated briefly in soy sauce, ginger, garlic, red chilli and brown sugar and then fried in a pan, with rice, oven-roasted broccoli and sesame seeds. After frying, the marinade is reduced to a glossy sauce. A tip: do not leave the salmon in the marinade for longer than half an hour, otherwise the salt in the soy sauce makes the fish firm and dry.

Method
Par-cooking the broccoli
Preheat the oven to 200 °C. Bring water with a pinch of salt to the boil in a pan with a lid. Cut the broccoli into small florets and the stalk into cubes and cook them, covered, for 5 to 7 minutes. Drain and let them steam dry without the lid.
Making the marinade
Crush the garlic or chop it finely, peel the ginger and grate it. Remove the seeds from the red chilli (hot, use to taste) and chop it finely. Mix the chilli, sugar, soy sauce, ginger and 1 tbsp of olive oil in a bowl. Add the salmon and put it in the fridge for at least 10 and at most 30 minutes, turning now and then.
Roasting the broccoli
Mix the garlic, the broccoli and the rest of the olive oil on a baking tray lined with baking paper and season with salt and pepper. Roast for 15 to 20 minutes, until the broccoli is al dente and the tops are dark, turning halfway.
Cooking the rice
Cook the rice according to the packet, about 12 to 15 minutes. Drain and let it steam dry without the lid.
Frying the salmon
Heat a frying pan over medium heat and take the salmon out of the marinade. Fry it for 2 to 3 minutes on the skin side and 1 to 2 minutes on the other side. Put the fish on a plate. Pour the marinade into the pan with 1 tbsp of water and boil vigorously for 2 minutes.
Serving
Spoon the rice onto two plates and put the salmon on top. Add the broccoli, sprinkle with the gomasio and pour the sauce over the fish and rice.
Tips & notes
Boil the leftover marinade vigorously for at least 2 minutes after frying: raw fish has been in it. Gomasio is a Japanese blend of sesame seeds and salt; without gomasio you can use toasted sesame seeds with a pinch of salt.
Chef's tip
Fry the salmon on the skin side first until it is crisp and only turn it when the fish has turned opaque about three quarters of the way up.
