Method
Make the speculaas layer
Put the speculaas biscuits in a sturdy bag and crush roughly.
Divide the crumbs between the dessert glasses.
Prepare the cherries
Drain the cherries and reserve the juice.
Mix the cornflour with a few tablespoons of cold cherry juice. Bring the rest of the juice to the boil. Stir in the cornflour mixture and the cinnamon and cook briefly until the juice thickens.
Take the pan off the heat and stir in the cherries. Leave to cool.
Make the mascarpone cream
Beat the mascarpone with the sugar until creamy.
Whip the cream until stiff and gently fold it into the mascarpone.
Build the glasses
Divide half of the cherries between the glasses. Add a layer of mascarpone cream.
Repeat with the remaining cherries and cream.
Finish festively
Mix the cocoa powder with the cinnamon and dust the desserts just before serving.
If you like, use a simple star or Christmas tree shape as a stencil for a festive pattern.
Tips & notes
Make the dessert a few hours ahead and store it covered in the fridge. Only add the cocoa just before serving. Use clear glasses so that the layers stay clearly visible.
