A chicken main course: quickly fried chicken breast with onion in a sweet and spicy sauce of ketchup, ketjap manis, peanut butter and vinegar. You mix the sauce in a minute and the chicken cooks in a few minutes, so it is on the table in a quarter of an hour. For a sweeter dish, stir in Limburg syrup; for more heat, add sambal or chilli oil. Lovely with rice, chips or bread.

Method

01

Fry the chicken

Heat the butter in a frying pan over medium heat and fry the diced chicken with salt and pepper for 4 to 5 minutes until it takes on colour.

02

Add the onion

Add the onion and fry for 3 to 4 minutes, until the onion is soft and the chicken is cooked through.

03

Mix the sauce

In a small bowl, mix the ketchup, ketjap manis, peanut butter and vinegar into a smooth sauce.

04

Add the sauce

Pour the sauce over the chicken and onion, stir well and simmer gently for 2 to 3 minutes until it clings to the chicken.

05

Season to taste

Taste and make it sweeter with Limburg syrup or hotter with sambal or chilli oil. Serve immediately, for example with rice, chips or bread.

Tips & notes

This is a quick version of a recipe known under this name in the family or region; its origin has not been established. Peanut butter and ketjap manis contain peanuts and soy, and ketjap often contains gluten: keep this in mind with allergies. Use smooth peanut butter for a smooth sauce. Keep leftovers for 2 days at most in the fridge and reheat them thoroughly.

Chef's tip

Fry the chicken in pieces of equal size over medium heat so they cook through without drying out. Add the sauce only once the chicken and onion have colour and let it reduce for 2 to 3 minutes. Taste before adding salt: ketjap and ketchup are already salty.

Variations

  • Sweeter: stir 1 to 2 tablespoons of Limburg syrup into the sauce, to taste.
  • Hotter: add sambal or chilli oil, to taste.
  • With minced meat: fry minced meat instead of chicken breast.
