Method
Cook the rice
Bring a pan of water to the boil (about one finger joint of water above the rice). Add the rice, cook for 8 minutes, drain and leave to rest for 15 minutes with the lid on the pan.
Vegetables and eggs
Cut the leek into half rings and rinse well. Dice the ham. Heat the sunflower oil in a pan. Beat the eggs loose and scramble them. Add the leek and ham, crumble the stock cube over the top and fry for 5 minutes.
Make the nasi
Mix the vegetable and egg mixture through the rice. Season with salt and pepper.
Serve
Serve immediately, with prawn crackers and peanut sauce if you like.
Tips & notes
Replace the rice with 400 g of egg noodles (bami) and you have bami goreng: the same recipe, a different base. Delicious with prawn crackers, fried onions and an extra egg. Do not leave cooked rice at room temperature for more than 1 hour; cool leftovers quickly, keep them in the fridge for a maximum of 1 day and reheat them until piping hot.
Variations
- Bami goreng: replace the rice with 400 g of egg noodles, otherwise identical preparation.
- Replace the ham with fried bacon bits or smoked chicken for a heartier variant.
- Stir a tablespoon of sambal through the rice mixture for a spicy version.
