A classic, honest Dutch dessert of full-fat yoghurt that slowly drains in a tea towel. The thick yoghurt is mixed with whipped cream, sugar and vanilla to a velvety, fresh dessert cream. Lovely with fresh seasonal fruit or toasted nuts with honey.

Method

01

Drain the yoghurt

Rinse a clean tea towel under the tap and wring it out well. Hang a sieve over a large bowl and lay the tea towel in it. Pour in the yoghurt, fold the cloth over it and leave to drain in the fridge for at least 6 hours, preferably overnight, until a thick, creamy hangop forms.

02

Vanilla

Slit the vanilla pod open lengthways, scrape out the seeds and mix them into the drained yoghurt.

03

Whip the cream

Whip the cream with the sugar until soft and airy.

04

Mix

Gently fold the whipped cream into the yoghurt until smooth and creamy.

05

Serve

Spoon into small bowls and serve with finely chopped seasonal fruit. Also lovely with toasted nuts and a little honey.

Tips & notes

“Hangop” takes its name from the cloth in which it used to be hung up to drain. Vary it with blackberries, raspberries or crumbled speculaas. Keeps for 2–3 days in a sealed container in the fridge.

Variations

  • Mix in some lemon zest for extra freshness.
  • Serve with fresh fruit or a spoonful of jam instead of plain.
