Method
Make the beurre noisette
Melt the butter over a gentle heat until the milk solids caramelise and the butter takes on a golden-brown, hazelnut colour. Strain while still warm through a fine sieve and leave to cool to room temperature.
Beurre noisette mayonnaise
Whisk the egg yolk loose with the mustard. Add the corn oil slowly in a thin stream, whisking, to a bound mixture. Pour in the cooled beurre noisette in a stream to a smooth, runny mayonnaise. Season with sumac, pepper and salt.
Tarragon cream
Blend the corn oil with the fresh tarragon to a bright green oil and strain through a fine sieve with a coffee filter. Whisk the egg white loose and gradually add the sushi vinegar and tarragon oil (or use a stick blender). Whisk to a smooth, firm cream.
Make the steak tartare
Cut the bavette with a sharp knife into very fine cubes. Mix with the shallot, chives, sumac and the beurre noisette mayonnaise. Stir carefully, taste and season with pepper and salt.
Serve
Spoon the tartare into small bowls or chef's rings. Finish with dots of tarragon cream and sprigs of garden cress. Serve with a fresh little salad, fresh chips and homemade mayonnaise.
Tips & notes
Steak tartare is raw meat: only use very fresh beef of top quality, cut it with a sharp knife (don't mince it) and keep everything well chilled. The beurre noisette gives the mayonnaise a beautiful nutty depth. Contains raw fish or raw meat: prepare just before serving and don't keep it; eat it on the same day, well chilled until serving.
Variations
- Replace the bavette with beef tenderloin for an even more tender, leaner tartare.
- Serve as a starter in smaller portions with toast instead of chips.
