A classic festive roast: pork loin, sliced and filled alternately with ham and cheese, wrapped in smoked bacon and slowly cooked in the oven. Served with a creamy mash of potato and kohlrabi, fresh garden peas and a silky mushroom cream sauce with a hint of soy. Rich, juicy and made for a festive family meal in the colder months.

Method

01

Fill the meat

Cut deep slits ½ cm apart into the pork loin, almost but not quite through the base (or ask your butcher to do this). Halve the ham and the cheese. Push a slice of cheese and ham into one slit, skip the next, and fill alternately until the whole piece is filled.

02

Wrap

Cover the meat with the slices of bacon and tie it up with kitchen string.

03

Roast

Grease a large ovenproof dish with butter. Put the roast in it, lay a sprig of rosemary on top, season with pepper and salt and cook for 60–70 min in a preheated oven at 180 °C.

04

Mash

Peel the potatoes and kohlrabi, cut into pieces and boil until tender. Mash finely with a knob of butter and a splash of cream; season with salt.

05

Peas

Blanch the peas for 2 min in salted water, rinse cold and leave to drain. Stew them with half of the shallot in a knob of butter and season with pepper.

06

Mushroom cream sauce

Stew the other half of the shallot with the garlic in butter. Add the mushrooms and fry briefly. Deglaze with the veal stock, soy sauce and cream, reduce to a thickened sauce and season with pepper.

07

Serve

Cut the roast into slices and arrange on the plates with the mash, the peas and the mushroom cream sauce.

Tips & notes

Measure the core temperature: at approx. 63–65 °C the meat is safely cooked and still juicy. After the oven, leave the roast to rest for 10 minutes under aluminium foil before you slice it; that way the juices stay inside. Keeps for 2–3 days in a sealed container in the fridge.

Variations

  • Replace the kohlrabi with celeriac in the mash for an earthier flavour.
  • Use turkey breast instead of pork loin for a lighter festive variant.
