Method
Boil the baby potatoes
Boil the baby potatoes in salted water for approx. 15 minutes until al dente. Drain.
Brown the ham
Season the ham with pepper and salt. Heat butter and olive oil and sear the ham golden brown all over.
Cook the ham
Put the ham in an ovenproof dish and cook for 35–45 minutes at 180 °C (core temperature 65 °C). After baking, leave to rest for a few minutes under foil.
Make the hunter's sauce
Render the bacon lardons in a pan without added fat. Add 25 g of butter and fry the pearl onions and mushrooms with thyme and bay leaf. Add the sugar and let it caramelise. Deglaze with red wine vinegar, red wine and veal stock. Reduce to a rich sauce.
Fry the baby potatoes
Melt some olive oil and butter and fry the boiled baby potatoes golden brown.
Bean salad
Boil the beans for 6 to 8 minutes until al dente and drain. Finely chop the parsley, garlic, spring onion and cherry tomatoes and mix to a vinaigrette with olive oil and red wine vinegar. Add the warm beans, season with pepper and salt and mix well.
Serve
Cut the ham into slices, lay on plates and spoon the hunter's sauce over the top. Serve with the bean salad and the baby potatoes.
Tips & notes
Really let the ham rest for a moment after the oven; then it stays juicy when slicing. You can make the hunter's sauce ahead and warm it gently. The bean salad is best fresh; keep leftover ham and sauce in the fridge for a maximum of 3 days.
Variations
- Replace the ham with turkey breast for a lighter version.
- Add a splash of cognac to the hunter's sauce for extra depth.
