Method
Preparation
Cut the onion into half rings and the carrot into half slices; finely chop the second onion. Cut the savoy cabbage into strips, blanch briefly and cool in iced water. Clean the shiitake mushrooms and remove the stalks.
Brown the meat
Heat the butter until it turns hazelnut brown. Brown the pork cheeks on all sides. Add the onion rings and carrot and fry briefly. Season with pepper and salt.
Stew base
Add the bay leaf, marjoram and thyme. Stir in the tomato purée and a little flour and cook briefly. Deglaze with the brown beer and veal stock, so that the meat is only just covered. Add the brown sugar and stir in.
Braise in the oven
Bring to the boil, cover and place in a preheated oven at 150 °C. Braise for about 1½ hours until the meat is meltingly tender.
Vegetable garnish
Sweat the finely chopped onion until translucent in a knob of butter. Add the blanched savoy cabbage and shiitake mushrooms and stew together for a few minutes over a medium heat. Season with pepper and salt and finish with fresh oregano.
Serve
Spoon some sauce and vegetables into a deep plate. Arrange the garnish on top and place a few pork cheeks on it. Finish with a sprig of marjoram.
Tips & notes
Lovely with crispy potato croquettes or a smooth mash. A fresh chicory salad also goes very well with it. Keeps for 3–4 days in the fridge, and freezes very well (up to 3 months); the flavour often deepens further by the next day.
Variations
- Replace the shiitake with chestnut mushrooms as an alternative.
- Use beef stock if you cannot find veal stock.
