Method
Prepare the lamb's lettuce
Wash the lamb's lettuce thoroughly and leave to drain well. If you like, pat dry with a tea towel or kitchen paper.
Apple and raisins
Peel the apple, remove the core and cut into cubes. Wash the raisins and leave them to plump up briefly in lukewarm water, so they get softer and their sweet flavour comes out better.
Toast the walnuts
Toast the walnuts in a dry frying pan until light brown and fragrant. Leave to cool and chop roughly.
Make the dressing
Whisk the white wine vinegar, sunflower oil, honey, pepper and salt to a smooth dressing.
Assemble the salad
Put the lamb's lettuce in a large bowl. Add the diced apple, raisins and walnuts and gently mix. Just before serving, add the dressing and toss until the salad is evenly coated.
Serve
Serve immediately as a side dish or light meal. If you like, garnish with some extra walnuts.
Tips & notes
Goes wonderfully with hearty stews such as zuurvlees or goulash. If you like, add some blue cheese or goat's cheese for a fuller flavour. Best eaten fresh; keep the dressing separate if you prepare in advance, so the lettuce doesn't go limp.
Variations
- Replace the walnuts with hazelnuts for a different flavour note.
- Add cubes of goat's cheese for a heartier lunch salad.
