Method
Prepare the frikandellen
Defrost the frikandellen and cut into thin strips. Put them in an ovenproof dish, sprinkle generously with shawarma spices and put under the grill until the meat is crisp.
Chop the vegetables
Cut the iceberg lettuce into strips, the tomatoes into slices, the cucumber into thin slices and the onion into rings.
Garlic sauce
Finely chop the clove of garlic. Add mayonnaise, milk, mustard, pepper and salt and mix to a smooth sauce.
Cook the chips
Cook the chips in the air fryer (or deep-fryer/oven) according to the packet until golden brown and crisp.
Build the kapsalon
Take an ovenproof dish or individual trays. Start with a layer of chips, lay the grilled strips of frikandel on top, sprinkle with the cheese and put briefly under the grill until the cheese has melted.
Finish and serve
Distribute the iceberg lettuce, tomato, cucumber and onion rings over the top and spoon the garlic sauce over. Serve immediately.
Tips & notes
Classically you use shawarma or doner meat; with frikandellen (Dutch minced-meat sausages) you have a budget-friendly family variant. Feel free to switch to (chicken) shawarma for the original version. A kapsalon is best straight away; keep leftover meat and sauce separately in the fridge and eat them within 1 day.
Variations
- Replace the shawarma meat with leftover gyros or souvlaki for a Greek kapsalon twist.
- Use sweet potato fries for a slightly sweeter, modern version.
